- 1 tablespoon olive oil
1/3 cup sliced yellow onion
1 cup sliced cremini mushrooms (or your favorite variety)
1 baked sweet potato, chopped
1 cup cooked quinoa
1/8 teaspoon each: coarse sea salt, chile powder
- Poke holes in 3 sweet potatoes and microwave on high for 8 minutes, turning twice. If the potatoes are still hard, microwave in 2 minute increments until they soften.
- Sauté the onion in the olive oil over medium heat until just tender, about 4 minutes.
- Add the mushrooms and cook until soft, about another 5 minutes. Add the sweet potato and cook just until golden.
- Stir in quinoa, salt, and chile powder and stir to combine and heat through.
