Mushroom Fried Quinoa With Avocado and Egg
Ingredients
- 1/2 cup sliced cremini mushrooms (or your favorite variety)
1 1/2 teaspoons olive oil, divided
3/4 cup cooked quinoa
1/4 Hass avocado, sliced
1 large egg
Pinch sea salt
Directions
- Heat 1 teaspoon olive oil in a medium skillet over medium heat. Add mushrooms and saute until tender, about 5 minutes. Add quinoa to heat through.
- Remove quinoa mixture and add remaining 1/2 teaspoon olive oil to skillet. Cook egg to desired doneness, about 3-4 minute for over easy.
- Place egg on top of quinoa mixture and top with avocado and a pinch of sea salt.
