Palm hearts are an ancient Arab delicacy and make for a great salad recipe. Here's one from Bateel.
- 4 fresh date palm hearts (jomara)
1 bunch of chopped parsley
50 ml extra-virgin olive oil
20 g frisée lettuce (for garnish)
Juice of one fresh lemon
Salt (to taste)
- Clean the date palm hearts (jomara) until you get to the middle white part.
- Cut them into thin slices. Add lemon juice, salt and extra-virgin olive oil. Mix together well.
- Arrange on a plate and garnish with chopped parsley and a nice piece of frisée lettuce.
