With this tomato-mozzarella mix, Bateel's Lentil Salad recipe gives this typical Umbrian dish an interesting twist.
150g cherry tomatoes
150g baby mozzarella
25g chopped parsley
Salt and pepper (to taste)
75ml balsamic dressing
50g mixed lettuce (side garnish)
- BALSAMIC DRESSING
50ml olive oil
25ml balsamic vinegar
- Boil the lentils for 10 to 15 minutes in lightly salted water.
- Strain and let cool. Cut the cherry tomatoes and baby mozzarella into halves and mix with the boiled lentils.
- Add salt and pepper, chopped parsley and balsamic dressing. Mix together.
- Serve garnished with mixed lettuce on the side and a little balsamic dressing drizzled on top.
