Beetroot Falafel

Ingredients
- Pita bread - 2 pieces
Rocket - 1 cup
Cherry tomato - 5-6
Radish - 3-4
Cucumber - 1/2
Red onion - 1/2
Beetroot, boiled - 2 medium sized
Coriander leaves - 1 bunch
Salt - 1 tsp
Onion chopped - 1/3
Cumin Powder - 1 ½ tbsp
Arabic Spice - 1 tsp
Chick peas fresh soak - 2 tins
Chicken Powder - 1 tbsp
Coriander Leaves - 1/2 bunch
Directions
- Soak the chickpeas for a minimum of 8 hours (try not to use tinned, it will make the falafel really wet). Once soaked, drain for a few minutes and pat dry with some kitchen towel. Leave to one side.
- Peel and dice the beetroot and place in a preheat conventional oven and put on roasting at around 35 minutes at 160*c.
- Add in the chickpeas, coriander, chili, garlic and seasoning with salt & pepper. Cover the bowl with cling film and cook in the microwave on a high heat for 8 minutes. Place all the ingredients into a blender, add the flour and bicarbonate of soda and blitz for 10 seconds so it is still a chunky consistency.
- Make the mixture into small balls and give a round shape. Ready for frying.
- Serve straight from the fryer by placing in the serving dish, arrange the salad, drizzle with Goat Cheese Dressing and Balsamic Reduction.
