Chicken Tikka Masala

Ingredients

  1. FOR THE CHICKEN TIKKA:
    250g Chicken thigh
    100g Hung yogurt
    30g Red chili paste
    40ml Mustard oil
    50g Ginger garlic paste
    Salt (to taste)
  1. 5g Mace cardamom powder
    5g Garam masala
    5g Cumin powder
    10g Chaat masala
    20ml lemon
  1. FOR THE MASALA:
    4pcs Chicken tikka
    250g Chopped onion
    5g Chopped green chili
    10g Chopped garlic
    5g Chopped ginger
    3g Ginger Julienne
  1. 2g Chopped Coriander
    15g Cream
    5g Butter
    10g Oil
    100g Chopped tomato 
    100g Tomato puree

Directions

FOR THE CHICKEN TIKKA:

  1. Marinate the chicken thigh with ginger, garlic paste, lemon juice and salt.
    Keep it marinated overnight.
  2. The next day, marinate it with the rest of the ingredients.
  3. Keep marinated for at least two hours then cook in a tandoor oven.

FOR THE MASALA:

  1. Heat the oil, cook the chopped ginger and garlic.
  2. Add the onion and cook until golden brown, then add chopped tomatoes.
  3. Add the tomato puree and cook until reduced and becomes a thick masala gravy.
  4. Julienne some chili and ginger and add to the mix.
  5. Finish with butter and cream and add freshly chopped coriander.
  6. Take four pieces of fresh chicken tikka and put on a plate with the masala.
