2 1/3 cups pancake mix
1 1/4 cups milk
1/4 cup vegetable oil, plus more for greasing
2 tablespoons sugar
1/3 cup canned pumpkin
1 teaspoon pumpkin pie spice, plus more for garnishing

In a medium bowl, mix together pancake mix, milk, vegetable oil, sugar, and eggs until well blended. Fold in pumpkin puree and pumpkin pie spice. Heat griddle or skillet over medium heat and grease pan with a little bit of vegetable oil or butter. For each pancake, pour about 1/4 cup of batter onto the griddle.
Let cook until the edges have formed bubbles, 1 to 2 minutes, and flip. Cook until the other side turns golden brown. Serve warm with pumpkin-flavored whipped topping, candied walnuts, and just a sprinkle of pumpkin pie seasoning.
