Lebanese Independence Day falls November 22, meaning all calories go out the window, just as long as you're chowing down on food from Lebanon (disclaimer: not really!). But why limit yourself when it comes to a gorgeous colorful salad like this? Executive Chef Chadi Faour from Al Falamanki restaurant in Dubai shares his mother's recipe for the classic dish which should have a place in every lunchbox.

Lebanese Fattoush Salad Recipe From Al Falamanki Dubai


  1. 100 gr Romaine Lettuce
    100 gr Rocca
    1/2 Tomato
    1/2 Cucumber
    20gr Watercress
    2 pc Red Radish
    15gr Spring Onion
    10 leaves Mint
    2 tbsp Olive Oil
    2tbsp Lemon Juice
    1tbsp Pomegranate Molasses
    1 pinch Sumac Powder
    50gr Toast Bread
    1 tsp Apple Vinegar
    1 pinch Salt


  1. Chop all the vegetables into chunky size bites and place in a bowl of water and ice to render more crisp. In the meantime toast some pita bread and break into 3 cm2 size bites.
  2. Remove the vegetables from the iced water and drain well.
  3. In a small bowl, mix the olive oil, lemon juice, sumac, salt, vinegar and molasses and drizzle on top of the vegetable.
  4. Add the toasted bread, mix well and serve.
