Lentil Soup That's Good For the Soul
Never underestimate the power of a good soup to heal mentally, physically and emotionally. If you've had a hard day, this recipe from Azkadenya restaurant is a great one to whip up when you get home. It's filling and tasty too!
Lentil Soup

Ingredients
- 1g red lentils
250g carrots
250g potatoes
200g white onion
50g garlic
50ml corn oil
30g salt
20g cumin powder
20g white pepper powder
Directions
- Place a large pot over medium-high heat. Add olive oil , garlic and chopped onions.
- Saute for 3-5 minutes until soft.
Add the potatoes and carrots then stir continuously to prevent sticking.
After stirring them for a short time, add some salt and pepper, cumin and finally some
washed red lentils to the mix.

Pour in 3 liters of water, cover and simmer for 30 minutes or until vegetables are soft.

Remove soup from heat, allow to cool slightly.
- Puree in a blender, then return to pot to
reheat. Serve hot.
