Ingredients
- FOR THE PAN-SEARED POTATO-CRUSTED SNAPPER:
2 x 200g white Snapper Fillet
250g Seafood mousse
Salt and peppers
Lime juice
Olive oil
- FOR THE LANGOUSTINE LEMON FOAM:
100ml Water
30g Sugar
2g Lecithin
100g Lemon juice
100ml Langoustine broth
- GARLIC BUTTER GLAZED VEGETABLES:
10g Chopped garlic
50g Mixed baby carrots
50g Asparagus tips
50g Kale
50g Broccolini
Directions
FOR THE PAN-SEARED POTATO-CRUSTED SNAPPER:
- Oil and season fish fillets with lime juice, salt and pepper.
- Cut length ways and spread
mousse over one side. Re-assemble. - Steam fish in bamboo steamer for 12 minutes.
- Remove
and rest for 5 minutes before serving.
FOR THE LANGOUSTINE LEMON FOAM:
- Combine the water, sugar, lemon, lecithin and langoustine broth then make foam with
hand mixer.
FOR THE LANGOUSTINE LEMON FOAM:
- Blanch all the vegetables separately till soft.
- Lightly brown the garlic in a pan with
butter. - Toss all the vegetables in the mixture and remove.
