Yin-Yang Shrimp

Sweet and Spicy or Creamy and Cool? Yin-Yang Shrimp Gives You the Best of Both Worlds

A balance of sweet and spicy, hot and cool, crispy and smooth from Miss Tess restaurant in Dubai. This signature dish, Yin-Yang Shrimp, is a combination of shrimp tempura prepared two ways with sriracha spicy mayo and creamy wasabi, topped with a mango salsa.

  1. 14g Prawn 16/20
  2. 60g White cabbage (optional)
  3. 200g Wasabi powder
  4. 100g Mayonnaise
  5. 1g Sakura mix
  6. 20g Tempura batter
  7. 50g Cucumber
  8. 1g Sweet chili sauce
  9. 20g Ground ginger pickle
  10. 2g Chili powder
  11. 2g Fine salt
  12. 2g White pepper powder
  13. 50g Sriracha sauce
  14. 1g Coriander
  15. 5g White sugar
  16. 30g Mango



  1. Mango Salsa - Mix sweet chili sauce with mango.
  2. Sauce - Mix wasabi with water, mayonnaise, salt, sugar and ground ginger pickle.
  3. Marinate half portion of prawn with salt and pepper and tempura batter.
  4. Deep fry until crispy.
  5. Mix prawn with sauce and place spoonfuls on a platter, top with mango salsa.


  1. Sauce – Mix mayonnaise with sriracha sauce, sweet chili sauce, garlic, salt, sugar and chili powder.
  2. Marinate half portion of prawn with salt and pepper and tempura batter.
  3. Deep fry until crispy.
  4. Mix prawn with sauce and place spoon full on a platter and top with sakura mix and coriander.
  5. White cabbage can be used as garnish for the dish.
